Kerala Thattukada Ulli Kari
Kerala Street Stall Onion 'Curry'

Ingredients:

3 Medium Red Onions (Pyaz / Ulli)* - thin sliced
6-10 Fresh Curry Leaves (Kaddi Patta / Kariveppila)
4-5 cloves Fresh Garlic (Leh-sun / Vellulli) - minced
½ inch piece Fresh Ginger (Adrak / Inchi) - minced
1 Roma Tomato (Tamatar / Takkali) - small chopped
½ tsp Black Mustard Seeds (Rai / Kadugu)
3 tsp Coriander Powder (Dhania Podi / Malli Podi)
½ tsp Turmeric Powder (Haldi / Manjalpodi)
½ - ¾ tsp Kashmiri Chile Powder (Kashmiri Mirchi / Kashmiri Mulakupodi) - amount to taste
⅛ tsp Granulated Sugar (Chini / Velutta Pancasara)
2 Tbs Coconut Oil (Nariyal ka Tel / Velichenna)
Kosher Salt (Namak / Uppu) to taste
-OPTIONAL-
1 Fresh Green Chile (Hari Mirch / Pachamulagu) - cut in half crosswise
1 tsp Kerala Garam Masala

Preparation:
  1. Heat coconut oil in a large pan, wok, or kadahi with a tight fitting lid over medium heat until shimmering - Once oil is hot, add mustard reeds and fry for 30 seconds
  2. Add onion and sauté until soft and translucent (apx 6 minutes) - Add curry leaves and continue to sauté until onions are light brown (apx 6-7 minutes more)
  3. Add garlic and ginger and continue to sauté for 1-2 minutes
  4. Add just enough water to cover the onions - Cover with lid and allow to cook for 1-2 minutes - Remove lid and sauté until 'dry' (apx 3 minutes) - Add coriander, turmeric, and Kashmiri chile powder and continue to sauté for 1 minute
  5. Add tomato, salt to taste (apx 1 tsp), and enough water to cover the mixture by about ½ inch - Cover with lid and bring to a boil - Reduce heat to a simmer and allow to simmer for 4-6 minutes until slightly thickened (consistency should be like thick soup - not watery like broth) - Add sugar (and green chile if using) and continue to simmer for 1 minute
  6. Add kerala garam masala (if using) and thoroughly combine
  7. Serve hot alongside parotta, chapatti, naan, pulao, or steamed rice or even paired with Thattu Kori (Kerala Street Stall Chicken Fry) for an incredible meal
* Can substitute 1 ½ lbs red baby onions or shallots - peeled and sliced if desired
