Ingredients:

1 8-10 lb Fully Cooked, Shank End, Bone in Ham*
1 20 oz Can Pineapple Slices in Juice
Juice from Canned Pineapple Slices
15-24 Whole Cloves - can substitute toothpick if desired
¾ Cup (packed) Light Brown Sugar
3 Tbs Dijon Mustard
-OPTIONAL-
1 Small Jar Maraschino Cherries

Preparation:
  1. Let ham sit at room temperature for 1 ½ hours before baking
  2. Preheat oven to 325ºF
  3. Wrap ham tightly with aluminum foil and place in a shallow roasting pan or rimmed baking sheet
  4. Bake the ham in the bottom third of the oven until an internal temperature of 120ºF is achieved (apx 1 ½ - 2 hours)
  5. While the ham is baking, thoroughly combine the brown sugar, Dijon mustard, and just enough of the pineapple juice to make a thick paste in a small/medium bowl - Set aside until needed
  6. Once the ham has baked the appropriate time, remove from oven and uncover - Increase oven temperature to 450ºF
  7. Decoratively arrange the pineapple slices on the outside of the ham securing them with the whole cloves (or toothpicks) - IF USING: Place a maraschino cherry in the center of each pineapple ring and secure with a whole clove (or toothpick)
  8. Brush the ham with half of the glaze and return to the oven - Allow to bake 12-15 minutes
  9. Again, remove from oven and brush with the remaining glaze - Return to oven and allow to bake for an additional 15-20 minutes until the pineapple is light golden brown
  10. Remove from oven and loosely tent with aluminum foil - Allow to rest 10-15 minutes before slicing and serving hot
Can use spiral cut ham if desired - IF USING a whole ham, score the entire surface of the ham
with ¼ inch deep cuts in a diamond pattern
