Grilled Honey Lime Chicken

4 (Apx 1 ½ lbs) Boneless/Skinless Chicken Breasts -OR- 2 lbs Bone in Chicken Pieces of choice

Juice of 2 Limes
Zest of 2 Limes
2 Cloves Fresh Garlic - minced
3 Tbs Honey
3 Tbs Grape Seed Oil - can substitute extra virgin olive oil if desired
½ tsp Kosher Salt - or to taste
¼ tsp Fresh Ground Black Pepper - or to taste
¼ tsp Sweet Hungarian Paprika - or to taste

  1. In a medium bowl, whisk together all marinade ingredients until well integrated
  2. Transfer chicken parts to a large zip-tip bag and add marinade
  3. Gently massage marinade into chicken until well coated
  4. Squeeze out as much air as possible and seal bag - Transfer to refrigerator and allow to marinade for a minimum 2 hours (over night for better results)
  5. Preheat grill to medium-high
  6. Place chicken directly on grill and cook until golden and slightly charred (juices should run clear and internal temp should be 165ºF) - Cooking time will vary depending on size, weight, and type of chicken pieces used
  7. Serve hot with grilled vegetables, roasted potatoes, rice, or pasta
