Grilled Applesauce Recipe

Grilled Applesauce

Ingredients:

3 lbs Apples (Apx 6-8 Apples)* - cored and cut in half (peel if desired)
½ Cup Dark Brown Sugar**
¼ Cup Fresh Lemon Juice
¼ Cup Unsweetened Apple Juice - can substitute plain water if desired
1 tsp Lemon Zest
1 tsp Ground Cinnamon - amount to taste
½ tsp Kosher Salt or to taste
-OPTIONAL-
2 tsp Vanilla Extract

Preparation:
  1. Set up grill for indirect cooking
  2. Place apples directly on grill rack on the 'cool' side (away from coals) and allow to grill with the lid closed for 5-10 minutes to a side or until soft, have grill marks, and are slightly caramelized
  3. While Apples are grilling, combine the remaining ingredients in a medium sauce pan (you can do this in a small Dutch oven on the grill if you choose) - Mix until well combined
  4. Add the apples to the pan and cover - Allow to cook over low heat (stirring frequently) - Mash the apples as they allow you to (add additional water/apple juice as needed to keep from getting too dry/thick)
  5. The applesauce is done when all of the apples have been mashed and desired thickness has been achieved (if using unpeeled apples, you may want to use an immersion blender to 'break up' the skins and make applesauce smooth)
  6. Adjust seasoning with additional sugar, cinnamon, and vanilla (if using)
  7. Serve warm or allow to cool to room temperature, transfer to an airtight container and chill in refrigerator to serve cold 
 * I like using ½ Gala and ½ Golden Delicious Apples for this but you can use any dessert
   apples you wish

** The amount of sugar varies depending on how sweet you like your apple sauce AND on the
    variety/sweetness of apples used
