Cold Crab Dip Recipe

Cold Crab Dip
with Homemade Old Bay® Seasoned Crackers

Ingredients:

Crackers:
   2 Cups All Purpose Flour
   2 tsp Kosher Salt
   2 tsp Sugar
   2 tsp Baking Powder
   4 Tbs Cold Unsalted Butter - cubed

 -‘Final Seasoning’-
   4 Tbs Melted Butter
   1-2 Tbs Old Bay® Seasoning




            Dip:
                 8oz Cream Cheese - room temperature
               ¼ Cup Sour Cream
               Zest of 1 Lemon
               Juice of ½ Lemon
               ¼ Cup Fresh Parsley - small chopped
               2 stalks Celery - diced
               1 clove Fresh Garlic - minced
               1 Small Shallot - diced (apx 3 Tbs)
               ½ Orange, Red, or Yellow Bell Pepper - diced
               1 lb Lump Crab Meat - drained and chopped
               Kosher Salt to taste
               Fresh Ground Black Pepper to taste

Preparation:

Crackers:
  1. Preheat oven to 375° - Line 2 baking sheets with parchment paper
  2. Place the dry ingredients in the work bowl of a food processor - Pulse 3-4 times to combine
  3. Add the butter and pulse 8-12 times until the flour resembles a coarse meal
  4. Add ½ Cup of cold water and pulse 4-5 times - Add water 1 Tbs at a time (pulsing 4-5 times each addition) until a shaggy dough is formed
  5. Scrape the dough out onto a lightly dusted counter or a cutting board - Knead until smooth (apx 3-5 minutes) - Cover with a clean towel and allow to rest for 15 minutes
  6. Roll out the dough to ⅛ inch thick - Use a pizza cutter, pastry wheel, or a sharp knife to cut the dough into 1 ½ inch squares then triangles - Transfer to the lined baking sheets leaving a slight gap on all sides of each ‘cracker’ - Use a fork to prick the top of each a couple of times
  7. Bake for 8 minutes and remove from oven - Brush with the melted butter and dust with the Old Bay - Return to oven making sure that you rotate the pans top to bottom and 180 degrees - Bake for another 5-8 minutes until crackers are just golden around the edges
  8. Turn off the oven, crack oven door about 6 inches, and allow the crackers to sit in the warm oven for 30 minutes - Remove and allow to cool fully before serving or storing in an airtight container for up to 1 week
Dip:
  1. Place cream cheese, sour cream, lemon zest and juice in a large bowl and season with ½ tsp salt and ¼ tsp pepper - Use a hand mixer, to combine until smooth and creamy
  2. Add the remaining ingredients and stir until well distributed - Adjust seasoning with additional salt, pepper, and lemon juice as desired
  3. Cover and place in the refrigerator for a minimum 30 minutes to allow flavors to meld
  4. Serve chilled or at room temperature with crackers and/or veggies for dipping
