Bang Bang Shrimp

Ingredients:

1 lb Jumbo Shrimp [21-25] - shelled and deveined
½ Cup Buttermilk
4 cloves Fresh Garlic - grated into a paste
¾ Cup Cornstarch
½ tsp Fresh Ground Black Pepper
½ Cup Mayonnaise
¼ Cup Thai Sweet Chile Sauce
1 tsp Rice Vinegar
¼ - 1 tsp Sriracha Sauce - amount to taste
Oil For Frying

Preparation:
  1. Place the buttermilk and grated garlic in a medium mixing bowl - Add the shrimp and give it a stir to make sure everything is coated and submerged - Cover and allow to marinate for a minimum 30 minutes (up to 3 hours)
  2. Once the shrimp have marinated for the desired time, whisk together the mayonnaise, sweet chile sauce, sriracha, and rice vinegar in a large bowl until thoroughly combined - Set aside until needed
  3. Whisk together the cornstarch and black pepper in a medium bowl and set aside until needed
  4. Add 2-3 inches of oil to a large skillet or pot and place over medium-high heat - Heat oil to 375ºF
  5. Once fry oil is hot, remove the shrimp one at a time from the buttermilk and drain excess - Transfer to the bowl containing the cornstarch and toss to coat - Repeat with remaining shrimp
  6.  Place the shrimp in the hot oil (DO NOT CROWD THE PAN - Do in batches if needed) and allow to fry until golden brown and cooked through (apx 1 ½ minutes to a side)
  7. Once all of the shrimp are cooked, transfer to the large bowl with the sauce and toss to coat
  8. Transfer to a serving dish, drizzle with any remaining sauce, garnish with chopped green onion or chives if desired, and serve immediately
