Türkçe Izgara Köfta
Turkish ‘Grilled Meatballs’

Ingredients:
1 lb Ground Chuck OR Lamb (Dana Kıyma
/ Kuzu Kıyma) - can use a 50/50 mix if desired
1 Small Onion (Soğan) - grated
2 cloves Fresh Garlic (Sarımsak) - grated into a paste
1 Egg (Yumurta) - beaten
½ Cup Breadcrumbs (Ekmek Kırıntıları)
3 Tbs Flat Leaf Parsley (Maydanoz) - minced
1 ½ tsp Kosher Salt (Tuz) or to taste
1 tsp Sweet Paprika (Tatlı Kırmızı Biber)
½ tsp Coriander Powder (Kişniş Tozu)
½ tsp Cumin Powder (Kimyon Tozu)
½ tsp Sumac (Sumak)
½ tsp Dried Mint (Kuru Nane)
¼ sp Ground Black Pepper (Karabiber)
¼ tsp Ground Cinnamon (Tarçın Tozu)
¼ tsp Ground Nutmeg (Küçük Hindistan Cevizi)
¼ tsp Aleppo Pepper (Halep Biberi) - can substitute cayenne pepper if desired
-OPTIONAL-
1-2 tsp Urfa Pepper Flakes (Urfa Biber) - if you want them spicy
Preparation:
- Place all of the ingredients into a large bowl and, using your hands, to combine thoroughly and evenly - Knead the mixture until very sticky (apx 3 minutes)
- Place in refrigerator for 30 minutes to firm up
- Using wet hands, roll into golf ball sized balls and press into a flat disk between ¼ and ½ inch thick - transfer to a parchment lined pan or plate and repeat until all of the meat mixture is used (should make around 20 köfta) - Again, place in the refrigerator for 20-30 minutes
- You can grill or fry your köfta:
- To Grill: Ready your grill with a medium-hot fire (300-400°F) - Once ready, grill the köfta until they have developed a nice sear and are cooked trough (apx 5 minutes to a side) - Remove from heat and allow to rest for 3-5 minutes before serving
- To Fry: Heat a teaspoon of olive oil in a medium/large skillet over medium-high heat until shimmering - Fry the köfta in batches until they have developed a nice sear and are cooked trough (apx 5 minutes to a side) - Remove from heat and allow to rest on absorbent paper for 3-5 minutes before serving
- Serve hot along with warmed Turkish flat bread (Bazlama) or pita, some charred tomatoes and chiles, Piyaz Salata (Turkish white bean salad) or Patates Salatası (Turkish Potato Salad), a side of Cacik (Turkish yogurt sauce), and rice for a complete meal
