The Everything, Dammit Bread

Ingredients:
1 Packet (¼ oz) Active Dry Yeast
¾ Cup Warm Water
2 Tbs Granulated Sugar
1 Cup Whole Milk - room temperature
¼ Cup Unsalted Butter - softened
1 Large Egg (room temperature) - white and yolk separated
1 ½ tsp Salt
4+ Cups All-Purpose Flour
2 Tbs Water
1 Tbs Tasmanian Spiced Traders Everything, Dammit Bagel Seasoning
or to taste
Preparation:
- Place yeast, water, and sugar in a large bowl and mix until yeast is dissolved - Cover and set aside for 10 minutes or until ‘frothy’
- Add the milk, butter, egg yolk, salt, and 2 Cups of the flour - Using a hand mixer, beat on medium for 3 minutes - Stir in the remaining flour a bit at a time until a firm dough is formed
- Turn out onto a floured surface and knead until smooth and elastic (apx 6-8 minutes) - Form into a ball
- Lightly oil a large bowl and roll the dough ball in the bowl to coat the surface with oil - Cover and set aside in a warm place for 1 hour or until doubled in size
- After doubling in size, punch down the dough and turn out onto a lightly floured surface - Divide into 3 equal parts - Roll each part into a ‘rope’ about 2 inches long
- Place the ‘ropes’ on a lightly greased baking sheet - Braid ‘ropes’ pinching the ends together and tucking under - Cover with a clean kitchen towel and set aside in a warm place for 45 minutes or until doubled in size
- Preheat oven to 375°F
- Whisk together the egg white and the 2 Tbs water - Brush over the dough – Sprinkle the Everything, Dammit Bagel Seasoning over the top (adjust amount to personal taste)
- Bake on the center rack for 20-30 minutes or until golden brown
- Transfer to a wire cooling rack and allow to cool to room temperature before slicing and serving
