Leftover Turkey Soup with Stuffing Dumplings

Ingredients:

Soup:
8 Cups Homemade Turkey Stock - can substitute store bought chicken/turkey stock if desired
3 Cups Leftover Turkey Meat - shredded
3 cloves Fresh Garlic - minced
2 Large Carrots - peeled and sliced
2 Large Celery Stalks - sliced
1 Large Onion - small chopped
1 Bay Leaf
2 sprigs Fresh Thyme
2 Tbs Extra Virgin Olive Oil
Kosher Salt and Fresh Ground Black Pepper to taste
-OPTIONAL-
1 Cup Whole Corn Kernels
1 Cup Green Beans - chopped
1 Cup Green Peas - fresh or frozen
8 oz Cremini Mushrooms - sliced

Dumplings:
2 Cups Leftover Stuffing
2 Large Eggs
6 Tbs All Purpose Flour
1 Tbs Chives - minced
1 tsp Kosher Salt + to taste
⅛ tsp Fresh Ground Black Pepper

Preparation:
  1. Heat oil in a large soup pot over medium heat until shimmering - Add onion and allow to cook until translucent (apx 6-8 minutes) - Add garlic and continue to sauté for an additional 2 minutes
  2. Add carrot, celery, thyme, and bay leaf - Continue to sauté for an additional 3-4 minutes
  3. Add turkey stock and bring to a boil - Reduce to a simmer and allow to cook until vegetables are soft (apx 10 minutes
  4. While the soup is simmering, whisk together the eggs, flour, 1 tsp salt, and ⅛ tsp black pepper in a medium bowl until smooth - Add the leftover stuffing and chives - Mix until thoroughly combined - Cover and set aside until needed
  5. Add turkey meat and optional vegetables (if using) and return to a simmer
  6. Check your dumpling mixture; Mixture should be slightly sticky but firm enough to hold its shape when rolled into a ball (if mixture is too soft/wet, add a little flour at a time until firm enough to roll and hold together - if mixture is too dry, add a little water until it hold together when rolled)
  7. Wet your hands and roll the dumpling mixture into balls approximately the size of ping pong balls and gently drop them into the simmering soup - Repeat until all of the dumplings have been made and incorporated
  8. Allow to cook until all of the dumplings float to the surface (apx 4-5 minutes)
  9. Remove from heat and adjust seasoning with kosher salt and fresh ground black pepper to taste
  10. Serve immediately garnished with additional chives or some chopped fresh parsley if desired
