Honey Roasted Parsnips

Ingredients:
1 lb Parsnips - peeled and quartered lengthwise into 'spears'
¼ Cup Dry Sherry
5 Tbs Honey
Kosher Salt to taste
Fresh Ground Black Pepper to taste
-OPTIONAL-
3 Tbs Pure Maple Syrup (reduce honey by 3 Tbs)
1 Tbs Fresh Thyme Leaves
Preparation:
- Preheat oven to 400ºF
- Bring a large pot of water to a boil over high heat - Add 2 tsp of salt to the water
- Add the parsnip 'spears to the boiling water and allow to cook for 3 minutes
- Drain the parsnips and set aside to dry for 5-7 minutes
- In a large mixing bowl, whisk together the sherry, honey, salt and pepper to taste (apx ½ tsp salt and ¼ tsp pepper to start), maple syrup, and thyme (if using)
- Add the parsnips to the mixing bowl and toss to coat
- Transfer parsnips to a lightly greased baking tray - Drizzle with the remaining honey mixture
- Place in the top third of the oven and allow to bake for 10 minutes
- Turn the parsnips to ensure even browning (rotate the tray while at it)
- Return to the oven and allow to bake until tender and golden brown on all sides (apx 10 minutes more
- Transfer to a serving dish and serve hot
