Texas Barbeque Mop Sauce

Ingredients:

Mop Sauce:
1 Can (12oz) Beer - use a lager like Lone Star® or Samuel Adam's Double Bock®
1 Medium Onion - diced
4 cloves Fresh Garlic - crushed
½ Stick Butter
½ Cup Cider Vinegar
¼ Cup Texas Brisket Dry Rub - recipe included
2 Tbs Worcestershire Sauce
2 Tbs Dark Brown Sugar
1 Tbs Whole Black Peppercorns
1 Tbs Paprika
-OPTIONAL-
2 tsp Hot Sauce

Texas Brisket Dry Rub:
3 Tbs Kosher Salt
2 Tbs Coarse Ground Black Pepper
1 Tbs Granulated Sugar
1 Tbs Ancho Powder - can substitute chili powder if desired
1 Tbs Garlic Powder
1 Tbs Mustard Powder
1 ½ tsp Chipotle Powder - can substitute cayenne pepper if desired
1 ½ tsp Onion Powder
1 ½ tsp Celery Seed

Preparation:
  1. Melt the butter in a medium sauce pan over medium heat - Add the onion and sauté until translucent
  2. Add garlic, dry rub, peppercorns, and paprika - Continue to sauté for 2 minutes
  3. Add the remaining ingredients and bring to a simmer
  4. Allow to simmer (stirring frequently) for 15 minutes
  5. Adjust flavor as desired
  6. Use to 'mop' your brisket (or other meat) while cooking if desired AND/OR use as a finishing or table sauce when serving
